175g turkey mince (under 5% fat)
150g of sweet potato
1 garlic glove grated
1 egg beaten
1 tsp paprika
Salt and pepper
150g green vegetables
1 tsp coconut oil
Heat oven to 180C/160C fan/gas 4. Put sweet potato wedges in the microwave for about 6 mins until just turning soft.
While the sweet potato is in the microwave, mix the mince in a bowl with garlic and egg. Get your hands stuck in and add some salt, pepper and paprika.
Shape the mixture into 2 small burgers. Place on a baking tray in the oven for about 15 minutes until cooked through.
Heat the coconut oil in a large frying pan over a high heat. Add the sweet potato wedges and shallow-fry for about 3 mins each side until they are nicely browned all over. Once cooked through, season with salt.
