Easy oven baked salmon with rice and broccoli

Ingredients

1 salmon fillet ⁣

60g basmati rice ⁣

Tenderstem broccoli⁣

1 chicken stock cute ⁣

Knob of butter ⁣

Salt & pepper ⁣

Lemon juice ⁣

Method

Lay salmon fillet on foil and place a knob of butter, salt, pepper and lemon juice on top and loosely cover.

Place the fillet on a baking tray in a pre heated fan oven at 180 degrees for 17-20 minutes. 

Cook the rice in a saucepan according to the instructions on the packet, mixing chicken stock into your boiling water. 

When there is approximately 4 minutes until your salmon and rice is cooked, boil the broccoli in a separate saucepan.
