20g rolled oats
30g ground almonds
50ml Almond milk unsweetened
1 medium egg
0.5 tsp salt
0.5 tsp coconut oil
0.5 tsp baking powder
80g of blueberries
15g 0% fat greek yogurt
3 tsp honey
Apart from the coconut oil, berries, yoghurt and HALF of the honey, shove everything into a blender and blend till smooth.
Then heat a pan with your coconut oil. Once hot, pour a small amount of batter into the pan (I'd say about the size of a drinks coaster) and cook evenly on both sides.
Little tip: These pancakes cook fast as they're small so make a tiny test pancake to gage your timings
